Indulge in the rich history and vibrant flavors of Chiapas, Mexico with our premium 1770 coffee, a tribute to the year coffee was first recorded in Mexican history. Produced by CABONOCH, a fair-trade certified cooperative known as Cafeticultores de los Bosques del Norte de Chiapas, this coffee embodies the dedication and tradition of smallholder producers from the Altos de Chiapas region.
About CABONOCH: CABONOCH represents a community of passionate coffee farmers who meticulously harvest ripe cherries and process them using washed methods on their own organic-certified farms. Their commitment to sustainable practices and quality ensures that every bean is a testament to the rich, fertile lands of Chiapas.
Unique Decaffeination Process: Our decaffeinated coffee undergoes a unique water-processing method at Descamex, a renowned facility in Mexico. This eco-friendly process involves soaking green coffee beans in a water solution to extract caffeine while preserving the essential flavor compounds. The caffeine is filtered out, and the flavor-rich solution is reintroduced to the beans, ensuring that you enjoy the full-bodied taste of coffee without the caffeine.
Taste the Tradition: Chiapas, the southernmost region of Mexico, is known for its mountainous terrain that stretches into Guatemala, home to the protected Triunfo Biosphere Reserve. This humid, tropical environment is ideal for coffee cultivation, and the small communities of producers take immense pride in their land and heritage. The organic methods they employ have been handed down through generations, resulting in coffee that is not only delicious but also ethically produced.

Tasting Notes
Tasting notes are the natural flavors found in coffee. These tasting notes vary based on environment, soil and weather.
Behind the bean
The Process
Most of the land where farmers cultivate their coffee is hilly or mountainous. About 10% of the farm area has small river crossings, which farmers protect by planting native species of enset (false banana), grass and other vegetation. 40 to 70% of the farms have shade trees and a canopy layer composed of mainly native tree species. Trees range in age from 5 to 15 years.
About the Coffee
At Uncharted, we pride ourselves on sourcing only the finest coffee beans from around the globe, each one scoring 85 or above on the specialty coffee grading scale. Our commitment is to bring you exceptional flavors and unparalleled quality.
Our journey begins with carefully chosen coffee farms that share our passion for quality and sustainable practices. We establish direct partnerships with local growers in renowned coffee-producing regions such as Ethiopia, Colombia, and Guatemala. This not only ensures that we receive the best of their harvests but also supports the farmers and their communities.
Each batch of our beans is meticulously tested and graded by certified experts to guarantee they meet the high standards of specialty coffee. These beans are then roasted to perfection, creating distinct and complex flavor profiles that cater to every palate.
